8 ounces fettuccine or linguine pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 teaspoon allspice

½ teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

½ cup heavy cream

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and a sprinkle of cayenne pepper. Cook for about 2-3 minutes on each side until shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the chopped onion, garlic, and diced bell peppers. Sauté for 4-5 minutes until the vegetables are tender. Stir in the allspice and remaining cayenne pepper, cooking for another minute until fragrant.

        Create the Creamy Base: Pour in the coconut milk and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes, or until slightly thickened. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

          Combine Pasta and Shrimp: Add the cooked pasta and sautéed shrimp back into the skillet, tossing to coat everything evenly in the creamy sauce. Stir in lime juice and adjust seasoning with more salt and pepper if needed.

            Serve: Divide the creamy shrimp pasta among bowls, garnishing with fresh cilantro or parsley. Serve with lime wedges on the side for an extra zesty kick.
