Ingredients

4 cups all-purpose flour

1 cup unsalted butter, softened

1/2 cup powdered sugar

1/2 cup milk, warm

1 tablespoon active dry yeast

1 teaspoon ground mahleb (optional)

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon anise seeds, crushed (optional)

Powdered sugar for dusting

Mixed nuts (walnuts, pistachios) for filling (optional)

Instructions

Activate Yeast: In a small bowl, combine warm milk and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough: In a large mixing bowl, whisk together the flour, powdered sugar, ground mahleb, ground cinnamon, anise seeds, and salt. Make a well in the center.

      Combine Ingredients: Add the softened butter and the activated yeast mixture into the well. Using your hands or a spatula, gently combine all ingredients until the dough comes together. If it's too dry, add a little more warm milk.

        Knead Dough: Transfer the dough to a floured surface and knead for about 5-8 minutes until smooth and elastic. Form it into a ball, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          Shape Kahk: After the dough has risen, punch it down and roll it into small balls about the size of a ping pong ball. If you're using nuts for filling, flatten each ball slightly, place a small amount of mixed nuts in the center, and fold the dough around it, rolling it back into a ball.

            Form Cookies: Place the shaped balls on a baking sheet lined with parchment paper, leaving space between them. Flatten each ball slightly with your palm to create a disc shape.

              Preheat Oven: Preheat your oven to 350°F (175°C).

                Bake: Bake the kahk in the preheated oven for 15-20 minutes or until they turn golden and slightly firm to the touch. Do not overbake.

                  Cool and Dust: Remove them from the oven and let them cool completely. Once cooled, dust generously with powdered sugar.

                    Serve: Enjoy your kahk with a cup of tea or coffee, perfect for special occasions!
