Ingredients

1 lb shrimp, peeled and deveined

1 red bell pepper, cut into squares

1 zucchini, sliced

1 cup cherry tomatoes

1/4 cup olive oil

2 tablespoons fresh lime juice

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped for garnish

4 ears of fresh corn, husked

1/4 cup mayonnaise

1/4 cup sour cream

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon lime zest

2 tablespoons fresh lime juice

1/4 cup grated Parmesan cheese

Fresh cilantro, chopped for garnish

Salt to taste

4 cups watermelon, cubed

1 cup feta cheese, crumbled

1/2 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

Salt and pepper to taste

4 boneless, skinless chicken breasts

1/4 cup olive oil

2 lemons (juiced and zested)

4 garlic cloves, minced

1 tablespoon fresh thyme leaves

1 tablespoon fresh rosemary, chopped

Salt and pepper to taste

Instructions

In a bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, smoked paprika, salt, and pepper.

    Add the shrimp to the bowl and toss to coat. Let marinate for about 20 minutes.

      Preheat the grill to medium-high heat.

        In the meantime, thread the marinated shrimp, bell pepper squares, zucchini slices, and cherry tomatoes onto skewers.

          Once the grill is hot, place the skewers on it. Grill for 2-3 minutes per side or until the shrimp turns pink and opaque.

            Remove from grill and garnish with fresh cilantro before serving.

                    Preheat grill to medium-high heat.

                      Wrap the husked corn in aluminum foil and grill for about 15-20 minutes, turning occasionally.

                        While the corn is grilling, mix together mayonnaise, sour cream, chili powder, garlic powder, lime zest, lime juice, and salt in a bowl.

                          Once the corn is cooked, unwrap the foil and spread the spicy sauce evenly over each ear.

                            Sprinkle with grated Parmesan cheese and chopped cilantro just before serving.

                                                      Preheat grill to medium-high heat.
