Ingredients

1 pound ground beef (preferably lean)

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon gochujang (Korean chili paste, adjust to taste)

1/2 teaspoon black pepper

1 cup green onions, chopped (plus more for garnish)

1 cup shredded carrots

2 cups cooked jasmine rice (or brown rice for a healthier option)

1 cup frozen peas (thawed)

Optional toppings: sesame seeds, sliced cucumbers, and cooked egg (sunny-side up)

Instructions

In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, ensuring not to burn the garlic.

    Add the ground beef to the skillet. Cook until the beef is browned, breaking it up into small pieces as it cooks, about 5-7 minutes.

      Drain any excess fat from the skillet, if necessary, then stir in the soy sauce, brown sugar, rice vinegar, gochujang, and black pepper. Mix until the sugar has dissolved and the ingredients are well combined.

        Add the shredded carrots and thawed peas to the skillet. Stir to mix everything together and allow to simmer for an additional 3-5 minutes. This will cook the vegetables slightly, keeping them vibrant and crunchy.

          Once everything is well combined and heated through, stir in the chopped green onions, reserving some for garnish.

            To serve, spoon the Korean Ground Beef mixture over a bed of cooked jasmine rice in a bowl. Garnish with additional green onions, sesame seeds, sliced cucumbers, and a sunny-side-up egg if desired.
