Ingredients

  • 8 oz egg noodles
  • 1 lb boneless skinless chicken breast
  • 2 tablespoons vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 cup unsalted roasted peanuts
  • 2 green onions
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili paste
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  • Cook the egg noodles in salted boiling water until al dente, then drain and set aside.
  • Combine soy sauce, rice vinegar, hoisin sauce, sesame oil, and chili paste in a bowl and whisk together.
  • Heat 1 tablespoon of vegetable oil in a skillet, add diced chicken, season with salt and pepper, and sauté until cooked through.
  • Remove chicken from skillet and keep warm.
  • In the same skillet, heat remaining oil, add minced garlic and ginger, and sauté until fragrant.
  • Add diced bell peppers and stir-fry until tender but crisp.
  • Return chicken to skillet, pour sauce over, and cook for 2-3 minutes to thicken.
  • Add cooked noodles and peanuts, tossing to coat everything in the sauce.
  • Garnish with sliced green onions and sesame seeds before serving.
