Ingredients

For the Pie Crust:

2 ½ cups all-purpose flour

1 tsp salt

1 tbsp granulated sugar

1 cup unsalted butter, chilled and cubed

6-8 tbsp ice water

For the Berry Filling:

2 cups fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 cup fresh raspberries

¾ cup granulated sugar

2 tbsp cornstarch

1 tsp vanilla extract

1 tbsp lemon juice

1 tsp cinnamon (optional)

For Assembly:

1 egg, beaten (for egg wash)

1 tbsp coarse sugar (for sprinkling)

Instructions

Prepare the Pie Crust:

    - In a large mixing bowl, whisk together the flour, salt, and sugar. Add the chilled butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

        Prepare the Berry Filling:

          - In a medium bowl, combine the sliced strawberries, blueberries, and raspberries. Add the sugar, cornstarch, vanilla extract, lemon juice, and cinnamon (if using). Toss gently to combine and let sit for about 10 minutes.

            Roll Out the Crust:

              - Preheat your oven to 425°F (220°C).

                - On a lightly floured surface, roll out one disk of dough into a circle that fits your pie dish. Place it into the pie dish, trimming any excess dough. Pour the berry filling into the crust, spreading it evenly.

                  Create the Lattice Topping:

                    - Roll out the second disk of dough and cut it into even strips (about 1 inch wide). Start laying the strips over the berry filling in a lattice pattern: place half the strips over the filling, then fold back every other strip to create a weave. Lay the remaining strips across and fold back the alternate strips again to finish the lattice.

                      Finishing Touches:

                        - Trim any excess dough and crimp the edges to seal. Brush the top with the beaten egg and sprinkle the coarse sugar over the lattice.

                          Bake:

                            - Place the pie on a baking sheet (to catch any drips) and bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with aluminum foil.

                              Cool and Serve:

                                - Allow the pie to cool for at least 2 hours before slicing to set the filling. Serve warm or at room temperature with a scoop of vanilla ice cream, if desired.
