Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tablespoon lemon zest

1/2 cup freshly squeezed lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

Extra lemon zest and mint leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper.

    Make the Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

      Add Citrus Flavor: Stir in the lemon zest, lemon juice, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Bake the Cookies: Spread the cookie dough evenly in the prepared baking dish. Bake in the preheated oven for about 20-25 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

            Cool & Prepare Glaze: Allow the cookies to cool completely in the pan. In a bowl, combine powdered sugar with a tablespoon of lemon juice until smooth. If desired, adjust the consistency by adding more lemon juice or powdered sugar.

              Glaze the Cookies: Once the cookies are completely cooled, spread the lemon glaze evenly over the top.

                Garnish & Serve: Sprinkle extra lemon zest over the glaze and add fresh mint leaves for a pop of color and flavor. Cut into squares or bars and serve.
