Ingredients

8 ounces of whole grain pasta (fusilli or penne works well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1 cup fresh basil leaves, torn

1/4 cup olive oil

Zest and juice of 2 lemons

1 tablespoon maple syrup (optional, for sweetness)

Salt and pepper to taste

1/4 cup pine nuts (toasted for extra flavor)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down the pasta.

    Prepare the Veggies: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine halved cherry tomatoes, diced cucumber, and finely chopped red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, maple syrup (if using), salt, and pepper until well combined.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the vegetables. Pour the dressing over the pasta salad and gently toss to ensure everything is well-coated.

          Add Freshness: Fold in the torn basil leaves and toasted pine nuts. Adjust seasoning with additional salt and pepper if desired.
