1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon salt

⅓ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large lemon

½ cup fresh lemon juice (about 2 lemons)

1 cup fresh blueberries (you can use frozen if needed)

⅓ cup powdered sugar (for glaze, optional)

1 teaspoon lemon juice (for glaze, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.

        Add Eggs and Flavor: Beat in the eggs one at a time, then add the vanilla extract and lemon zest, mixing until well combined.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the butter mixture, alternating with lemon juice. Begin and end with flour mixture, mixing until just combined. Be careful not to overmix.

            Fold in Blueberries: Gently fold in the fresh blueberries with a spatula, ensuring they're evenly distributed throughout the batter.

              Transfer to Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, loosely cover it with aluminum foil.
