Ingredients

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Zest and juice of 1 large lemon

4 cups fresh spinach

½ cup cherry tomatoes, halved

Salt and black pepper to taste

¼ cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, heat the olive oil. Add the minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant. Add the shrimp and season with salt and black pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Add the Spinach and Tomatoes: In the same skillet, add the cherry tomatoes and cook for about 2 minutes until they start to soften. Then, add the fresh spinach and cook until wilted, about 1-2 minutes.

        Combine Pasta and Shrimp: Return the cooked shrimp to the skillet, then add the lemon zest and juice. Toss in the drained pasta and if needed, add reserved pasta water a little at a time until the desired consistency is reached.

          Finishing Touches: Stir in the grated Parmesan cheese and mix well. Adjust seasoning with additional salt and pepper as necessary.
