Ingredients

2 cups cooked chicken breast, shredded or diced

4 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 cup cucumber, sliced

1/4 cup red onion, thinly sliced

1/3 cup grated Parmesan cheese

1/4 cup toasted walnuts or pine nuts

1/4 cup fresh basil leaves, chopped

Zest and juice of 1 large lemon

1/3 cup extra virgin olive oil

Salt and freshly ground black pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper until well combined. Adjust seasoning to taste.
