1/4 cup fresh lemon juice (about 2 large lemons)

1/2 cup extra virgin olive oil

1 teaspoon Dijon mustard

1 garlic clove, minced

1 tablespoon honey or maple syrup (for a vegan option)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

Optional: 1 tablespoon chopped fresh herbs (such as parsley or basil)

Instructions

Juice the Lemons: Squeeze the lemons to extract 1/4 cup of fresh lemon juice. Remove any seeds.
