Ingredients

1 cup almond flour

1/2 cup all-purpose flour

1 cup granulated sugar (or a sugar substitute like monk fruit)

1/2 cup unsalted butter, softened

3 large eggs

1/2 cup unsweetened almond milk

1 teaspoon almond extract

1 teaspoon baking powder

1/2 teaspoon salt

2 cups mixed berries (strawberries, blueberries, and raspberries)

1 cup Greek yogurt (vanilla or plain)

2 tablespoons honey or maple syrup (for sweetening yogurt)

Fresh mint leaves for garnish

Instructions

Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan. In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

    Combine Wet Ingredients: Add the eggs one at a time, mixing well after each addition. Stir in the almond milk and almond extract.

      Mix Dry Ingredients: In a separate bowl, sift together the almond flour, all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

        Bake the Cake: Pour the batter into the prepared loaf pan. Bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before slicing.
