Ingredients

For the Crust:

1 ½ cups pistachios, shelled and finely ground

½ cup graham cracker crumbs

⅓ cup unsalted butter, melted

2 tablespoons sugar

Pinch of salt

For the Filling:

16 oz cream cheese, softened

1 cup sour cream

¾ cup granulated sugar

2 large eggs

Zest of 1 lemon

Zest of 1 lime

⅓ cup fresh lemon juice

⅓ cup fresh lime juice

1 teaspoon vanilla extract

For the Cherry Topping:

2 cups fresh or frozen cherries, pitted

½ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 tablespoon water

Garnish:

Whipped cream

Chopped pistachios

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine ground pistachios, graham cracker crumbs, melted butter, sugar, and salt. Mix until the texture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

          Make the Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Add in the sour cream and granulated sugar, mixing until well combined.

                - Incorporate the eggs one at a time, beating after each addition.

                  - Mix in the lemon zest, lime zest, lemon juice, lime juice, and vanilla extract until everything is well blended and smooth.

                    Assemble and Bake:

                      - Pour the filling over the cooled crust, smoothing the top with a spatula.

                        - Bake in the preheated oven for 50-60 minutes, or until the center is just set and slightly jiggly.

                          - Once finished baking, turn off the oven and leave the cheesecake inside for an hour to cool gradually.

                            Prepare the Cherry Topping:

                              - In a medium saucepan over medium heat, combine the cherries, sugar, cornstarch, lemon juice, and water.
