Ingredients

For the Dough:

2 cups all-purpose flour

1/2 cup semolina

1/2 cup unsalted butter, softened

1/4 cup vegetable oil

1/4 cup powdered sugar

1/2 teaspoon active dry yeast

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup milk (as needed for consistency)

For the Filling:

1 1/2 cups pitted dates, chopped

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon unsalted butter (for filling)

1 tablespoon orange blossom water (optional)

1/4 cup chopped walnuts or almonds (optional)

To Finish:

Powdered sugar (for dusting)

Instructions

Prepare the Filling: In a medium saucepan, combine the chopped dates, butter, cinnamon, nutmeg, and orange blossom water (if using). Cook on low heat for about 5-7 minutes until the dates soften and can be easily mashed into a paste. You may add chopped nuts at this stage if desired. Set aside to cool.

    Make the Dough: In a large mixing bowl, combine the flour, semolina, powdered sugar, salt, ground cinnamon, and yeast. Mix well.

      Incorporate the Fat: Add in the softened butter and vegetable oil to the dry ingredients. Use your fingers to rub the fat into the flour until the mixture resembles coarse crumbs.

        Bind the Dough: Gradually add milk to the mixture, a few tablespoons at a time, mixing until the dough is soft but not sticky. It should come together into a smooth ball. Allow it to rest for about 30 minutes.

          Shape the Cookies: Preheat your oven to 350°F (175°C). Divide the rested dough into small balls, about the size of a walnut. Take a ball, flatten it in your palm, and place a teaspoon of the date filling in the center. Carefully pinch the edges of the dough to seal the filling inside, then either shape it gently into a ball or use a maamoul mold for decorative shapes.

            Bake the Cookies: Place the shaped cookies on a baking sheet lined with parchment paper, leaving enough space between them. Bake in the preheated oven for about 15-18 minutes, or until they are lightly golden but not browned.

              Cool and Finish: Remove the cookies from the oven and let them cool down slightly on the baking sheet. Once cooled, dust with powdered sugar before serving.
