Ingredients

8 large eggs

1 cup egg whites

1/2 cup black beans (drained and rinsed)

1 cup spinach (chopped)

1/2 cup bell peppers (diced)

1/2 cup cherry tomatoes (halved)

1/2 cup reduced-fat shredded cheese (like Monterey Jack or cheddar)

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

4 large whole wheat tortillas

Optional toppings: salsa, avocado, Greek yogurt

Instructions

Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet (about 18x13) with parchment paper for easy cleanup.

    In a large mixing bowl, whisk together the eggs, egg whites, cumin, paprika, salt, and pepper.

      Stir in the black beans, spinach, bell peppers, and cherry tomatoes until everything is well combined.

        Pour the egg mixture onto the prepared sheet pan and spread it out evenly.

          Sprinkle the shredded cheese over the top of the egg mixture.

            Bake in the preheated oven for about 20-25 minutes, or until the eggs are fully set and the top is slightly golden.

              Remove from the oven and let it cool for a few minutes. Once cooled, use a spatula to cut the egg mixture into four equal squares.

                Place each square onto a whole wheat tortilla. Roll the tortillas tightly around the filling, folding in the sides as you go to create a burrito wrap.

                  If desired, you can place the burritos seam side down on the baking sheet and bake for an additional 5-10 minutes to crisp them up.

                    Slice the burritos in half and serve warm with salsa, avocado, or a dollop of Greek yogurt on top.
