Ingredients

1 1/2 pounds flank steak or skirt steak

3 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust for spice preference)

Fresh cilantro for garnish (optional)

Instructions

Prepare the Marinade: In a bowl, whisk together olive oil, lime juice, cumin, smoked paprika, chili powder, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper until well combined.

Marinate the Steak: Place the flank or skirt steak in a large resealable bag or shallow dish. Pour the marinade over the steak, ensuring it is coated evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Preheat the Grill: When you're ready to cook, preheat your grill or grill pan over medium-high heat.

Grill the Steak: Remove the steak from the marinade, allowing any excess marinade to drip off. Place the steak on the grill and cook for about 4-6 minutes on each side for medium-rare, depending on the thickness of your steak. Use a meat thermometer; the internal temperature should be around 130°F for medium-rare.

Rest and Slice: Once cooked, remove the steak from the grill and let it rest for 5-10 minutes. This allows the juices to redistribute. After resting, thinly slice the steak against the grain to ensure tenderness.

Serve and Enjoy: Garnish with freshly chopped cilantro if desired. Serve your Chipotle-style steak in tacos, burrito bowls, or alongside rice and veggies for a complete meal.
