Ingredients

1 lb pork belly, cut into 1-inch cubes

1/4 cup pure maple syrup

1/4 cup Dijon mustard

2 tbsp soy sauce

1 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 tsp salt

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a mixing bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, black pepper, smoked paprika, and salt until well combined.

      Marinate the Pork Belly: Place the pork belly cubes in a large resealable plastic bag or mixing bowl. Pour the marinade over the pork belly, ensuring all pieces are well coated. Seal the bag (or cover the bowl) and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.
