Ingredients

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 jar (about 24 oz) marinara sauce

4 sub rolls

1 cup shredded mozzarella cheese

Olive oil for frying

Optional: sliced jalapeños or banana peppers for topping

Instructions

Prepare the Meatballs: In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, salt, and pepper. Mix well until just combined.

    Shape Meatballs: Form the mixture into meatballs, approximately 1.5 inches in diameter. You should get about 15-18 meatballs.

      Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Carefully add the meatballs (you may need to do this in batches) and cook for about 5-7 minutes on each side, until they are browned. Remove and set aside once cooked.

        Simmer in Sauce: In the same skillet, pour in the marinara sauce, allowing it to come to a gentle simmer. Add the meatballs back into the sauce and cook for an additional 10-15 minutes, covering the skillet with a lid.

          Prepare the Sub Rolls: While the meatballs are simmering, preheat your oven to 350°F (175°C). Slice the sub rolls open, leaving them attached on one side. If desired, you can lightly toast the insides in the oven for a few minutes.

            Assemble the Subs: Once the meatballs are cooked through and coated in sauce, place 3-4 meatballs in each sub roll. Spoon extra marinara sauce over the meatballs, then top with a generous handful of shredded mozzarella cheese.

              Melt the Cheese: Place the assembled subs on a baking sheet and bake in the preheated oven for about 5-8 minutes, until the cheese is melted and bubbling.

                Serve: Remove from the oven and let cool slightly. Add any additional toppings like sliced jalapeños or banana peppers if desired. Enjoy your delicious meatball subs!
