Ingredients

8 oz fusilli or rotini pasta

2 cups cooked chicken breast, diced (grilled or rotisserie)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, diced chicken, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, and fresh parsley.

        Dress the Salad: Pour the dressing over the pasta mixture and toss gently until all ingredients are evenly coated.

          Add Feta: Sprinkle the crumbled feta cheese on top and give the salad a gentle toss to incorporate.

            Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
