Ingredients

2 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup bell peppers (red, yellow, or orange), diced

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup lemon juice

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell peppers, and olives.

    Add the crumbled feta cheese and chopped parsley to the bowl.

      In a separate small bowl, whisk together the lemon juice, olive oil, oregano, salt, and pepper until well emulsified.

        Drizzle the dressing over the salad and gently toss to coat all the ingredients evenly.

          Adjust seasoning if necessary and serve immediately, or refrigerate for up to 30 minutes for enhanced flavors.
