Ingredients

1 pound ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 medium onion, finely diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (10 oz) diced tomatoes with green chilies

2 tablespoons taco seasoning

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (optional, for extra heat)

Salt and freshly ground pepper, to taste

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions

Brown the Beef: In a large pot or Dutch oven, warm a drizzle of oil over medium heat. Add the ground beef, cooking until it’s browned and crumbled, about 5 to 7 minutes. If there is excess fat, drain it away.

Add Vegetables: Introduce the diced onion, bell pepper, and minced garlic to the pot. Sauté for 3 to 4 minutes, or until the vegetables become tender and fragrant.

Incorporate Spices: Sprinkle the taco seasoning, ground cumin, smoked paprika, chili powder (if using), salt, and pepper over the beef and vegetables. Stir well to ensure everything is evenly coated with the spices.

Add Beans and Tomatoes: Pour in the drained black beans, pinto beans, and the entire can of diced tomatoes (along with their juices). Stir vigorously to combine all ingredients thoroughly.

Mix in Corn: Add the corn and mix it in well with the other components. Allow the mixture to simmer over low heat for about 10 minutes, which will help all the flavors meld beautifully.

Cheese It Up: Once simmering, sprinkle the shredded cheese over the top of the mixture. Cover the pot with a lid for a few minutes to allow the cheese to melt completely and become bubbly.

Serve: Remove from heat and ladle the delicious mixture into bowls. Garnish with freshly chopped cilantro for a burst of freshness. Serve with crispy tortilla chips on the side for a delightful crunch.

Presentation Tips: Consider serving the fiesta bowl in colorful bowls or layered in a clear dish to showcase the vibrant colors of the ingredients. You can also provide a variety of toppings such as sour cream, avocado slices, or jalapeños for an extra touch.
