  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

  • 24 pieces unwrapped mini peanut butter cups
  • sea salt for sprinkling optional

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix creamy peanut butter, granulated sugar, and brown sugar until smooth.
  • Add the egg and vanilla extract, beating until fluffy and well combined.
  • In a separate bowl, whisk together baking soda, salt, and flour, then gradually add to the peanut butter mixture.
  • Scoop tablespoon-sized portions of dough onto the baking sheet, leaving 2 inches between each.
  • Bake for 10-12 minutes until edges are lightly golden and centers are soft.
  • Press a mini peanut butter cup into the center of each cookie while warm.
