Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 stalks celery chopped
  • 1 medium potato diced
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup corn fresh, frozen, or canned
  • 1 can diced tomatoes undrained
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • to taste salt and pepper
  • to taste fresh parsley chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium-high heat and sear the beef until browned on all sides.
  • Remove the beef and set aside. In the same pot, sauté onion and garlic until translucent.
  • Return the beef to the pot and add carrots, celery, potato, green beans, corn, and diced tomatoes.
  • Pour in the beef broth and add thyme, oregano, bay leaf, salt, and pepper.
  • Bring to a vigorous boil, then reduce heat to low and cover.
  • Simmer gently for 1.5 to 2 hours, stirring occasionally and adjusting seasoning as needed.
  • Remove the bay leaf before serving.
  • Ladle soup into bowls and garnish with chopped parsley.

Serve with crusty bread for a complete meal.
