Ingredients

3 large eggs

1/4 cup fresh mozzarella cheese, diced

1/4 cup cherry tomatoes, halved

2 tablespoons fresh basil, chopped

1 tablespoon olive oil or unsalted butter

Salt and black pepper to taste

Optional: a pinch of red pepper flakes for heat

Instructions

In a mixing bowl, crack the eggs and whisk them until fully combined. Add a pinch of salt and black pepper to taste. You can also add a pinch of red pepper flakes if you like a bit of heat.

    Heat the olive oil or butter in a non-stick skillet over medium heat until shimmering but not smoking.

      Pour the whisked eggs into the skillet, tilting the pan gently to spread the eggs evenly. Let the eggs cook undisturbed for about 1-2 minutes, until they begin to set on the edges.

        As the eggs start to set but the center is still slightly runny, sprinkle the diced mozzarella cheese, halved cherry tomatoes, and chopped basil evenly over one half of the omelet.

          Using a spatula, carefully fold the other half of the omelet over the filling. Allow it to cook for another 1-2 minutes or until the cheese begins to melt and the eggs are cooked through but still soft.
