Ingredients

1 cup crushed pineapple, drained (reserve juice)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/2 cup sour cream

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/2 cup shredded coconut (optional)

Fresh pineapple slices and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until all the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch pie dish to form a crust. Set it aside in the refrigerator to firm up.

    Make the Cream Filling: In a large mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Set aside.

      Mix the Cheese Filling: In another bowl, beat the softened cream cheese until smooth. Add the sour cream and the reserved pineapple juice (from draining the crushed pineapple) and mix until well combined.

        Combine Ingredients: Gently fold the crushed pineapple into the cream cheese mixture, then carefully fold in the whipped cream mixture until there are no streaks visible.

          Assemble the Dessert: Pour the pineapple cream filling over the chilled graham cracker crust, spreading it evenly. If desired, sprinkle shredded coconut on top for added texture and flavor.

            Chill and Serve: Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight for best results. Once set, slice and serve with fresh pineapple slices and mint leaves for garnish, if desired.
