Ingredients

  • 1 cup rolled oats
  • ½ cup almond flour
  • ½ cup pumpkin puree
  • ¼ cup nut butter
  • ¼ cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon sea salt
  • ¼ cup unsweetened coconut flakes
  • to taste cinnamon and coconut sugar for rolling

Instructions

  • Mix the dry ingredients in a large bowl: rolled oats, almond flour, and protein powder.
  • In a separate bowl, combine the wet ingredients: pumpkin puree, nut butter, honey, cinnamon, nutmeg, ginger, and sea salt.
  • Pour the wet mixture into the dry ingredients and stir until well combined.
  • If using, fold in the coconut flakes gently.
  • Scoop out portions and roll them into small balls, about 1 inch in diameter.
  • Arrange the bites on a parchment-lined baking sheet or plate.
  • If desired, roll each bite in a mixture of cinnamon and coconut sugar.
  • Chill in the refrigerator for at least 30 minutes to firm up.
