Ingredients

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for a vegan option)

1/2 cup mixed nuts (almonds, walnuts, pecans), chopped

1/4 cup sunflower seeds

1/4 cup chia seeds

1/2 cup protein powder (vanilla flavor recommended)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips or dried fruit (e.g., cranberries, apricots)

Instructions

Prepare the Pan: Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang to make removal easier.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, sunflower seeds, chia seeds, protein powder, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.

        Combine Both Mixtures: Pour the wet mixture into the dry ingredients and stir well until everything is evenly coated. If you're adding chocolate chips or dried fruit, fold them in now.

          Press Into Pan: Transfer the mixture to the prepared baking dish. Using your hands or a spatula, press the mixture down firmly and evenly.

            Chill and Set: Refrigerate the pan for at least 1 hour to allow the bars to set properly.

              Cut and Serve: Once firmly set, lift the bars out using the parchment paper. Cut into 12 bars (or desired size).

                Storage: Store the bars in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.
