Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 4 cloves garlic finely minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning blend
  • 1 teaspoon smoked paprika
  • 1 cup cherry tomatoes halved
  • 1 lb store-bought potato gnocchi
  • 1 cup fresh baby spinach
  • ½ cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish optional

Instructions

  • In a large skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, and smoked paprika, and cook until golden brown.
  • Remove chicken from skillet and set aside.
