Ingredients

4 boneless, skinless chicken thighs

1 cup long-grain rice (such as Jasmine or Basmati)

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

2 cups fresh spinach (or kale)

1 teaspoon dried Italian herbs (oregano, thyme, basil)

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sear the Chicken: In a large skillet or pan over medium-high heat, add olive oil. Season the chicken thighs with salt, pepper, and paprika. Once the oil is hot, add the chicken and sear for about 4-5 minutes on each side until golden brown. Remove chicken from the pan and set aside.

    Sauté Aromatics: In the same pan, add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for another 30 seconds until fragrant.

      Add Rice and Chicken Broth: Stir in the rice and dried Italian herbs, ensuring everything is combined. Pour in the chicken broth and bring to a simmer.

        Cook the Chicken and Rice: Return the seared chicken thighs to the pan, nestling them into the rice. Cover the pan with a lid and reduce heat to low. Let it simmer for 18-20 minutes, or until the rice is cooked and the chicken is fully cooked through (internal temperature should reach 165°F).

          Create the Creamy Sauce: Remove the lid, and reduce the heat to low. Stir in the heavy cream and Parmesan cheese until melted and combined. Fold in fresh spinach and cook for an additional 2-3 minutes until wilted.

            Adjust Seasoning: Taste and adjust seasoning with more salt and pepper if desired.

              Serve: Garnish with freshly chopped parsley and serve hot, directly from the pan for a comforting meal.
