Ingredients

  • 1 lb ground beef
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn
  • 1 can 14 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup long-grain rice uncooked
  • 2 cups beef or vegetable broth
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh cilantro chopped
  • Lime wedges

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and diced bell pepper, sauté for 3-4 minutes.
  • Stir in minced garlic and cook for 1 minute.
  • Increase heat to medium-high, add ground beef, and cook until browned.
  • Drain excess fat and sprinkle in taco seasoning, mixing well.
