Ingredients

1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 tablespoon lemon zest (about one lemon)

Juice of 1 lemon

12 oz (340g) potato gnocchi (store-bought or homemade)

2 cups fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for garnish)

Instructions

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken thighs, season with salt and pepper, and sauté until browned and cooked through (about 5-7 minutes). Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, dried thyme, and dried rosemary, cooking for an additional minute until fragrant.

      Add Liquids: Pour in the chicken broth, scraping any brown bits from the bottom of the pot. Add the heavy cream, lemon zest, and lemon juice, stirring to combine.

        Incorporate Gnocchi: Once the mixture is simmering, add the potato gnocchi to the pot. Stir gently to ensure the gnocchi is submerged in the sauce.

          Simmer Together: Allow the gnocchi to cook for 3-5 minutes, or until they float to the surface. This means they're done! Add the cooked chicken back into the pot along with the fresh spinach. Stir until the spinach wilts down into the sauce.
