Ingredients

2 cups basmati rice

500g lamb or chicken, cut into pieces

1 onion, finely chopped

3 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, and green beans)

1/4 cup pine nuts, toasted

1/4 cup almonds, toasted and chopped

2 teaspoons ground cumin

2 teaspoons ground coriander

1/2 teaspoon cinnamon

Salt and pepper to taste

4 cups chicken or lamb broth

1/4 cup olive oil

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon saffron threads soaked in 2 tablespoons water

Instructions

Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

    Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant (about 3-4 minutes). Add the meat and cook until browned on all sides.

      Add Spices and Vegetables: Stir in the cumin, coriander, cinnamon, salt, and pepper. Add the mixed vegetables and toast with the spices for 2-3 minutes.

        Combine Rice and Broth: Add the drained rice to the pot, followed by the broth. If using, add the saffron water as well. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until the rice has absorbed the liquid and is tender.

          Toast Nuts: While the rice is cooking, toast the pine nuts and almonds in a skillet over low heat until golden brown, stirring frequently to avoid burning.

            Fluff and Serve: Once the rice is done, remove from heat and let it sit covered for another 5 minutes. Gently fluff the rice with a fork, mixing in the toasted nuts.

              Garnish and Enjoy: Serve the Oozi on a large platter garnished with fresh parsley. Enjoy with yogurt or a side salad.
