Ingredients

4 cups mixed baby greens (spinach, arugula, and kale)

2 large oranges, peeled and segmented

1 cup mandarin oranges, drained

1 cup sliced strawberries

1 cup toasted coconut flakes

1/2 cup pecans or walnuts, chopped

1/2 cup crumbled feta or goat cheese (optional)

1/3 cup orange juice (freshly squeezed is best)

2 tablespoons honey

2 tablespoons balsamic vinegar

1/4 cup olive oil

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together the freshly squeezed orange juice, honey, balsamic vinegar, and olive oil. Season with salt and pepper to taste. Set aside.
