Ingredients

1 whole chicken (3-4 lbs)

1 can or bottle (12 oz) of your favorite beer or soda (light lager or cola works best)

2 tablespoons olive oil

2 tablespoons Dijon mustard

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 lemon, cut into wedges

Fresh rosemary sprigs (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. This helps achieve crispy skin.

Make the Marinade: In a small bowl, combine the olive oil, Dijon mustard, garlic powder, onion powder, smoked paprika, dried thyme, salt, and black pepper. Mix well to create a paste.

Season the Chicken: Rub the marinade generously all over the chicken, including under the skin. Make sure to get as much of the blend onto the chicken as possible for maximum flavor.

Prepare the Bottle/Can: Open the can or bottle of beer/soda and take a few sips to create space (or pour into a glass). This helps prevent any overflow while cooking. You can also pierce a couple of additional holes for better steam release, if desired.

Set Up for Roasting: Place the opened can/bottle upright in the center of a roasting pan. Carefully lower the chicken onto the can, allowing it to sit upright and balance. The can/bottle will steam the chicken from the inside, keeping it moist and flavorful.

Add Lemon: If desired, place the lemon wedges around the chicken in the roasting pan to infuse additional flavor during cooking.

Roast: Place the roasting pan in the preheated oven. Roast for about 1.5 hours, or until the internal temperature of the chicken reaches 165°F (75°C), and the juices run clear when pierced.

Rest the Chicken: Once done, remove from the oven and let the chicken rest for about 10-15 minutes before carefully removing it from the can/bottle (be cautious of the steam).

Serve: Carve the chicken and serve it with your favorite sides, drizzling any remaining pan juices over the top. Enjoy the succulent flavor of your oven-roasted chicken!
