Ingredients

1 loaf of brioche bread, sliced into thick pieces

4 large eggs

1 cup whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

Pinch of salt

1/4 cup brown sugar (for the brûlée topping)

Fresh berries (for garnish, optional)

Mint leaves (for garnish, optional)

Instructions

Prepare the Bread: In a greased 9x13 inch baking dish, arrange the slices of brioche bread in a single layer. If needed, you can layer the bread to fit properly.

    Make the Custard Mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until fully combined and smooth.

      Combine: Pour the custard mixture evenly over the brioche slices, ensuring all the bread is well-soaked. You can gently press the bread down to absorb the custard. Cover the dish tightly with plastic wrap.

        Chill Overnight: Refrigerate the dish overnight (or for at least 4 hours) to allow the bread to soak up the custard.

          Preheat the Oven: The next morning, preheat your oven to 350°F (175°C).

            Bake: Remove the plastic wrap and bake the soaked French toast for about 30-35 minutes, or until the top is golden brown and slightly puffed up.

              Prepare the Topping: Once baked, sprinkle an even layer of brown sugar over the top of the French toast.

                Brulée the Sugar: Using a kitchen torch, carefully caramelize the brown sugar until it bubbles and turns a deep amber color. If you don’t have a torch, you can place it under the broiler for 1-2 minutes, watching closely to prevent burning.

                  Serve: Allow to cool slightly, then cut into squares. Serve warm with fresh berries and mint leaves for garnish if desired.
