1 cup polenta (cornmeal)

4 cups vegetable broth or water

1 cup whole milk or plant-based milk

2 tablespoons unsalted butter or olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese (optional, for serving)

Fresh herbs (like parsley or basil, for garnish)

Instructions

In a medium saucepan, bring the vegetable broth (or water) to a boil.

    Slowly whisk in the polenta, stirring constantly to avoid lumps.

      Reduce the heat to low and continue to cook, stirring frequently, for about 30-40 minutes, or until the polenta is thick and creamy.

        In a separate pan, melt the butter or heat the olive oil over medium heat. Add the minced garlic and sauté for 2-3 minutes until fragrant but not browned.

          Stir in the dried thyme, dried oregano, salt, and pepper. Cook for another minute to combine the flavors.

            Once the polenta is cooked, remove it from the heat and stir in the milk and the garlic herb mixture until well combined.

              Taste and adjust seasoning, adding more salt or pepper if needed.

                Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh herbs for garnish.
