Ingredients

500g mixed mushrooms (shiitake, cremini, and oyster)

2 tablespoons olive oil

1 tablespoon unsalted butter

2 tablespoons miso paste (white or yellow)

2 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon sesame oil

Freshly cracked black pepper, to taste

1 tablespoon fresh chives, finely chopped (for garnish)

2 large egg yolks (preferably farm-fresh)

Toasted sesame seeds (for serving)

Instructions

Clean the Mushrooms: Gently wipe the mushrooms with a damp cloth to remove dirt. Trim the stems if they are tough. Slice larger mushrooms into bite-sized pieces.

    Prepare the Miso Mixture: In a small bowl, mix together the miso paste, soy sauce, and sesame oil. Stir until smooth and well combined. Set aside.

      Heat the Pan: In a large non-stick skillet, heat the olive oil over medium-high heat. Add the butter and let it melt.

        Sauté the Mushrooms: Once the butter is bubbling, add the sliced mushrooms. Spread them out in an even layer and let them cook undisturbed for about 3-4 minutes. This caramelizes them nicely.

          Add Garlic and Miso: Once the mushrooms are golden, add the minced garlic and stir. After 30 seconds, lower the heat slightly and pour the miso mixture over the mushrooms. Stir well to coat all the mushrooms evenly. Cook for an additional 2-3 minutes until heated through.

            Season It: Season with freshly cracked black pepper to taste. Remove from heat.

              Prepare to Serve: To serve, spoon the miso mushrooms into a shallow bowl. Carefully place a raw egg yolk in the center.

                Garnish: Sprinkle the chopped chives and toasted sesame seeds over the mushrooms and egg yolk for added flavor and texture.
