Ingredients

500g fresh mushrooms (shiitake, oyster, or button)

2 tablespoons olive oil

1 tablespoon unsalted butter

2 tablespoons white miso paste

1 tablespoon soy sauce

1 teaspoon sesame oil

2 garlic cloves, minced

1 small shallot, finely chopped

1 teaspoon fresh ginger, grated

2 egg yolks (preferably free-range)

Fresh chives or green onions, for garnish

Toasted sesame seeds, for garnish

Salt and pepper to taste

Instructions

Prepare the Mushrooms: Clean the mushrooms with a damp cloth to remove any dirt. Slice them into thick pieces to enhance texture during frying.

    Heat the Pan: In a large skillet over medium heat, add the olive oil and butter. Let the butter melt and the oil shimmer.

      Sauté Aromatics: Add the chopped shallot and minced garlic to the pan. Sauté for about 2-3 minutes until fragrant and translucent, being careful not to burn.

        Cook the Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the pan. Sauté for about 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and have released their moisture.

          Add Flavors: Mix in the miso paste, soy sauce, sesame oil, and grated ginger. Continue to cook for another 2-3 minutes, ensuring the mushrooms are well coated and the miso paste is fully incorporated. Season with salt and pepper to taste.

            Prepare the Egg Yolks: In a small bowl, separate the egg yolks from the whites. If desired, slightly whip the yolks to break them up for easier mixing later.

              Serve: Divide the pan-fried mushrooms among serving plates. Make a small well in the center of the mushrooms on each plate and carefully place an egg yolk in each well.

                Garnish: Sprinkle with chopped chives or green onions and a few toasted sesame seeds for added crunch and flavor.
