Ingredients

1 ripe peach, pitted and diced

2 tablespoons honey

1 tablespoon Dijon mustard

1/4 cup balsamic vinegar

1/2 cup extra-virgin olive oil

Salt and black pepper to taste

Optional: Fresh herbs (such as basil or mint) for garnish

Instructions

In a blender or food processor, combine the diced peach, honey, Dijon mustard, and balsamic vinegar. Blend until smooth.

While the blender is running, slowly drizzle in the olive oil to emulsify the dressing until it reaches a creamy consistency.

Season with salt and black pepper to taste. Blend again to incorporate.

If desired, stir in finely chopped fresh herbs for added flavor and garnish.

Transfer the vinaigrette to a glass jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

Shake well before serving, and drizzle over your favorite salads or grilled vegetables.
