2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 cup sour cream

1 teaspoon vanilla extract

1/4 teaspoon almond extract

3 large eggs

2 cups fresh peaches, peeled and sliced

2 tablespoons cornstarch

1 tablespoon lemon juice

1/4 cup brown sugar

Instructions

Preheat the Oven: Preheat your oven to 325°F (163°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture evenly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then remove and let cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar, mixing until fully incorporated.

        Add the Sour Cream and Flavors: Stir in the sour cream, vanilla extract, and almond extract until smooth. Add the eggs one at a time, mixing on low speed until just combined (do not over-mix).

          Layer the Peaches: In a separate bowl, toss the sliced peaches with cornstarch, lemon juice, and brown sugar. Gently fold the peaches into the cheesecake mixture.

            Combine and Bake: Pour the cheesecake filling over the cooled crust, spreading evenly. Bake in the preheated oven for about 45-50 minutes or until the center is set but still slightly jiggly.

              Cool and Chill: Once baked, remove from the oven and let it cool at room temperature for about an hour. Then refrigerate for at least 4 hours or overnight for best results.
