Ingredients

2 cups rolled oats

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

2 cups almond milk (or milk of choice)

1 ripe banana, mashed

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (like walnuts or pecans, optional)

Fresh banana slices and chopped nuts for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or similar size.

Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, peanut butter, honey (or maple syrup), mashed banana, and vanilla extract. Mix well until fully combined and smooth.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, cinnamon, and salt. Stir to incorporate evenly.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until everything is well combined. If using, fold in the chocolate chips and chopped nuts.

Bake: Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and the center is set.

Cool and Serve: Remove from the oven and let it cool for a few minutes. Cut into squares and serve warm topped with fresh banana slices and more nuts if desired.

Storage: Leftovers can be stored in an airtight container in the fridge for up to 5 days. Reheat in the microwave to serve warm.
