To truly appreciate Pecan Pie Cookies, it's essential to understand their roots in the classic dessert. Pecan pie, a staple in Southern cuisine, has a rich history that dates back to the 1800s. Originally, this beloved pie was created by early American settlers who utilized the abundance of pecans in the region. The pie is typically made with a flaky crust, a gooey filling of brown sugar, eggs, and corn syrup, and, of course, a generous amount of toasted pecans. Over the years, pecan pie has become synonymous with holiday feasts, particularly during Thanksgiving, where it often competes with pumpkin pie for the title of most popular dessert.

Ingredients

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chopped pecans

1/2 cup corn syrup

1 teaspoon maple extract

1/4 teaspoon ground cinnamon

A pinch of nutmeg

Optional: Flaky sea salt for topping

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture, stirring until just combined.

Incorporate Pecans: Fold in the chopped pecans until evenly distributed throughout the dough.

Prepare Pie Filling: In a small bowl, mix together the corn syrup, maple extract, ground cinnamon, and nutmeg to create the pecan pie filling.

Assemble Cookies: Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spaced about 2 inches apart. Using your thumb, make a small indent in the center of each cookie.

Fill with Pecan Pie Mixture: Gently spoon a small amount (about 1/2 teaspoon) of the pecan pie filling into the indent of each cookie.

Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges.

Cool and Top: Once baked, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. If desired, sprinkle a pinch of flaky sea salt on top of the cookies while they are still warm.

Enjoy: These Pecan Pie Cookies are delicious warm but can also be enjoyed at room temperature. Serve them as a delightful treat!
