Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup packed brown sugar

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 tsp ground cinnamon

1 tsp ground nutmeg

½ tsp ground ginger

1 cup canned pumpkin puree

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 cup chopped pecans (plus extra for topping)

½ cup cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract (for frosting)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.

Combine Wet Ingredients: In another bowl, mix together the pumpkin puree, vegetable oil, eggs, and 1 tablespoon of vanilla extract until smooth.

Combine All Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing. Gently fold in the chopped pecans.

Bake the Cake: Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Prepare the Frosting: In a mixing bowl, beat the softened cream cheese, powdered sugar, remaining vanilla extract, and a pinch of salt together until smooth and creamy.

Frost the Cake: Once the cake is completely cooled, spread the cream cheese frosting evenly over the top. Sprinkle additional chopped pecans on top for garnish.

Serve and Enjoy: Slice into squares and serve. Enjoy your delicious Pecan Pumpkin Cake with a cup of coffee or tea!
