Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar, plus extra for dusting

1 teaspoon vanilla extract

2 cups all-purpose flour

1 cup finely chopped pecans

1/4 teaspoon salt

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream the softened butter and 1/2 cup of powdered sugar together until light and fluffy.

      Stir in the vanilla extract to incorporate.

        Gradually add the flour and salt to the butter mixture, mixing until combined.

          Fold in the finely chopped pecans until evenly distributed throughout the dough.

            Scoop tablespoon-sized amounts of dough and roll them into balls (about 1 inch in diameter). Place them on the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for about 15-20 minutes, or until the bottoms turn lightly golden.

                Allow the cookies to cool slightly on the baking sheet for about 5 minutes before transferring them to a wire rack.

                  Once the cookies have cooled completely, dust them generously with additional powdered sugar.
