Ingredients

For the Chicken Marinade:

4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 tablespoon paprika

1 tablespoon ground cumin

2 teaspoons dried oregano

1 teaspoon salt

1 teaspoon black pepper

1/4 cup olive oil

Juice of 2 limes

For the Creamy Green Sauce:

1 cup fresh cilantro leaves, packed

1/2 cup mayonnaise

1/4 cup Greek yogurt

1 jalapeño, seeds removed (adjust for heat preference)

2 cloves garlic, minced

Juice of 1 lime

Salt and pepper to taste

For Serving:

Lime wedges

Cooked rice or potatoes

Instructions

Prepare the Marinade:

    In a medium bowl, whisk together minced garlic, paprika, cumin, oregano, salt, black pepper, olive oil, and lime juice.

      Marinate the Chicken:

        Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 1 hour, or overnight for richer flavor.

          Make the Creamy Green Sauce:

            In a blender or food processor, combine cilantro, mayonnaise, Greek yogurt, jalapeño, minced garlic, lime juice, and a pinch of salt and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed. Set aside.

              Grill the Chicken:

                Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.

                  Serve:

                    Remove the chicken from the grill and let it rest for a few minutes. Slice and serve alongside the creamy green sauce, lime wedges, and your choice of cooked rice or roasted potatoes for a complete meal.
