Ingredients

1 package (16 oz) phyllo dough, thawed

1 lb ground beef or lamb

1 large onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp cinnamon

1/2 tsp paprika

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

1/2 cup unsalted butter, melted

1 cup shredded cheese (mozzarella or feta)

1/2 cup chicken or beef broth

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat Filling: In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute.

      Add the Meat: Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned. Drain any excess fat if necessary.

        Season the Meat: Stir in the diced tomatoes, ground cumin, coriander, cinnamon, paprika, salt, and pepper. Cook for an additional 5 minutes until the mixture is thickened. Remove from heat and add the chopped parsley and half of the shredded cheese.

          Prepare the Phyllo: Take a sheet of phyllo dough and lay it flat on a clean surface. Brush it lightly with melted butter. Place another sheet on top and repeat until you have 4-5 layers.

            Assemble the Pie: Place half of the phyllo layers into a large greased baking dish, allowing the edges to hang over the sides. Spoon the meat mixture evenly over the phyllo base, then sprinkle the remaining cheese on top.

              Top with Phyllo: Layer the remaining phyllo sheets on top of the filling, brushing each with melted butter. Tuck any overhanging phyllo into the edges to seal the filling.

                Cut and Bake: Using a sharp knife, cut the top layers of phyllo into squares or diamonds (this helps it crisp up). Pour the chicken or beef broth gently over the top to ensure moisture.

                  Bake: Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and crispy.

                    Serve: Let cool for a few minutes before cutting into portions. Serve warm and enjoy this delicious Egyptian delicacy!
