Ingredients

2 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup mayonnaise

1/2 cup roasted red peppers (pimentos), chopped

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Optional: 1/4 cup green onions, finely chopped

Optional: 1/4 cup diced jalapeños for extra heat

Instructions

Prep the Ingredients: Begin by shredding the sharp cheddar cheese if not pre-shredded. Finely chop the roasted red peppers, green onions, and jalapeños (if using).

Combine Cheese Base: In a medium mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer or a spatula to mix until the mixture is smooth and well combined.

Add the Cheddar: Gradually fold in the shredded cheddar cheese into the cream cheese mixture. Use a rubber spatula to ensure everything is evenly mixed.

Incorporate Pimentos: Gently stir in the chopped roasted red peppers (pimentos), Dijon mustard, Worcestershire sauce, garlic powder, and cayenne pepper. Mix until the peppers are evenly distributed throughout the cheese mixture.

Season to Taste: Taste the mixture and season with salt and black pepper as needed. If you prefer extra heat, stir in the diced jalapeños at this point.

Chill Out: Cover the bowl with plastic wrap or transfer the pimento cheese to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld. For best results, let it sit overnight.

Serve: Serve your pimento cheese spread with an array of dippers such as crackers, fresh vegetables, or toasted baguette slices. It’s also fantastic as a sandwich filling!

Prep Time: 15 minutes | Total Time: 1 hour 15 minutes (plus chilling time) | Servings: Approximately 8-10 servings.
