Ingredients

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes. Whisk until well combined.

    Add Chicken: Add the cubed chicken breasts to the marinade. Toss to ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

        Skewering: Thread the marinated chicken onto the skewers, alternating with pieces of your choice of vegetables (like bell peppers, zucchini, or onions) if desired.

          Grill the Skewers: Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

            Garnish and Serve: Remove from grill and sprinkle with fresh parsley. Serve hot with lemon wedges on the side.
