Ingredients

4 cups fresh pineapple juice

2 cups freshly squeezed lemon juice

4 cups sparkling water or club soda

1 cup granulated sugar (adjust to taste)

1/2 cup fresh mint leaves, plus extra for garnish

1 lemon, sliced

1 pineapple, sliced

Instructions

In a large pitcher, combine the fresh pineapple juice and freshly squeezed lemon juice.

    Add the granulated sugar to the juice mixture and stir well until the sugar is fully dissolved.

      Pour in the sparkling water or club soda gently to avoid losing its fizz. Stir lightly to combine.

        Add the mint leaves and gently muddle them in the mixture to release their flavor.
